Preheat your pizza oven to a minimum of 250˚C and prepare your ingredients ready to cook. Trim the asparagus to remove the woody foot of the stem, beat your eggs, slice your tomatoes in halve and finely chop your herbs.
In a large cast iron skillet melt the butter and adding in your asparagus to roast for 1-2 mins. Follow with the beaten egg and stir. Allow the egg to settle in the pan and then add in your tomato pieces, chopped herbs and a few dollops of the black garlic puree.
Return to the oven and close the door. Cook for 8-10 mins until golden.
Serve with a green rocket salad and season the fire-ttata with a good pinch of sea salt.
