This is my Indian-inspired twist on a classic studded soft cheese roasted in the pizza oven. The aromatic wood smoke and fierce heat melt the cheese whilst infusing it with delicate spices and fermented garlic. The cumin seed sprinkle and fennel top garnish lighten it up so it doesn’t taste too heavy. This could be served with sourdough or a grilled naan bread.
Method
Preheat your pizza oven to 250˚C and while it’s heating up prepare your cheese.
Make a slit with a small paring knife and insert black garlic cloves and sprigs of mint. Then sprinkle the top of the cheese with your spices
Roast for 8-10 mins until the cheese is bubbling and melting. Serve with a simple salad of chopped herbs and bread to dip into the soft spiced cheese.
