This is my Indian-inspired twist on a classic studded soft cheese roasted in the pizza oven. The aromatic wood smoke and fierce heat melt the cheese whilst infusing it with delicate spices and fermented garlic. The cumin seed sprinkle and fennel top garnish lighten it up so it doesn’t taste too heavy. This could be served with sourdough or a grilled naan bread.
Method
Preheat your pizza oven to 250˚C and while it’s heating up prepare your cheese.
Make a slit with a small paring knife and insert black garlic cloves and sprigs of mint. Then sprinkle the top of the cheese with your spices
Roast for 8-10 mins until the cheese is bubbling and melting. Serve with a simple salad of chopped herbs and bread to dip into the soft spiced cheese.

A smoked delight - Bourbon Smoked Brisket! I’ve been smoking food for many years and I love trying new combinations of wood, interesting smoker designs and forgotten cuts of meat. For this recipe I’ve tried to use my Alfa pizza oven as a hot smoker and a classic brisket was the perfect test. It really [...]
Wood Roasted Vegetables with Anchovies, Garlic and Walnuts! This recipe is inspired by Italian style crudités and the warm emulsified dip based on anchovies, garlic and olive oil called ‘bagna cauda’ - which translates from Italian into english as ‘warm bath’. It is perfect as a starter, a light lunch or served on the [...]
Pea Pesto and Sourdough discard Crackers! This seasonal dip is perfect with a rustic sourdough cracker. The grated fennel in the peas provides a refreshing anise flavour that pairs to the crackers with fennel seeds and sea salt. Method Heat your oven to at least 250˚C and pour your sourdough discard onto a lined baking [...]
Lamb Breast ‘Porchetta’ with Harissa and Wild Garlic! One of my favourite ways to use a wood-oven is to utilise the residual heat of the oven to slow cook things overnight. It’s the perfect environment for a slow braised larger joint of meat, the initial cooking time is hot, and then very gradually cools [...]
