This recipe roasts a whole broccoli in the pizza oven marinated in rich combination of aromatic spices and fragrant coconut oil. The outside is crunchy and the soft is tender and nutty. Try carving at the table and serving with a fresh slaw and curry sauce on the side.
Method
Preheat your oven to 300-350˚C and then move your fire to one side.
Warm your coconut oil until it has melted, then stir in all your spices to form a curry paste. Brush or rub the spices into the florets.
Place upright in the pizza oven and roast for 20 mins. The edges will blacken and crisp up and the stalk should soften enough to insert the tip of knife easily.
Serve with curry sauce on the side and some zingy spiced slaw made with fennel shavings, grated carrot and sliced spring cabbage.
