Cooked in a fiercely hot pizza oven, the mushrooms develop additional richness while the cheese melts into a creamy base that perfectly complements their earthy character. This is an elegant pizza that celebrates seasonal ingredients and allows the natural flavours to shine.
Method
Gently cook the sliced onion in olive oil over a low heat until deeply caramelised and golden.
Increase the heat and add the chopped wild mushrooms. Cook until their moisture has evaporated and they begin to brown. Season with salt, pepper and thyme.
Stretch the pizza dough and scatter the mozzarella evenly across the base.
Spoon over the mushroom mixture, distributing it evenly.
Add the chanterelles across the pizza, allowing them to remain visible as a feature topping.
Bake in a fully heated pizza oven until the crust is blistered and golden and the cheese is bubbling.
Finish with freshly grated Parmesan, a few thyme leaves and a drizzle of good quality olive oil.
