Step one: Choosing your charcoal
Good charcoal is the foundation of great Konro cooking. Traditional Binchotan gives incredible heat and purity, while high quality lumpwood charcoal is perfect for everyday use. Avoid briquettes, as they burn unevenly and affect flavour.
A mix of Binchotan and lumpwood works beautifully, offering fast ignition with long, consistent heat.
