If you have time marinade these wings overnight before cooking and allow the flavours to work into the chicken. The tangy yogurt and spices work wonderfully roasted in a wood fired pizza oven and provide an authentic tandoori flavour to the wings. Serve with yogurt and mint oil.
Method
Preheat your wood fired pizza oven to 350˚C and while the oven is warming up make your marinade (if you have time do this the day before to allow the chicken to absorb all the flavours it’ll taste even better).
Use a pestle and mortar or spice grinder to make a smooth paste with the chilli, garlic, ginger, tomato puree and green peppercorns. Then add in the ground spices and seeds. Mix the spice puree with yogurt and oil and thoroughly coat the wings.
Arrange your spiced wings on a lined roasting tray and cook for 10 mins before turning over with a pair of tongs. Return to the pizza oven for a further 5-10 mins roasting. Check the chicken with a temperature probe to ensure they’re fully cooked and serve with a yogurt dip.
