The ultimate healthy fast food recipe – Mackerel and Tapenade!
This recipe takes minutes to prepare and just moments to cook. The fierce heat of a pizza oven is perfect for roasting fresh fish without over cooking it and this herby stuffing is a twist on a classic tapenade.
Method
Preheat your oven to 250-300˚C.
In a food processor blitz your olives, capers, gherkins and basil with olive oil. Stuff the cavity of your mackerel with the herby tapenade and score the fish several times with a shallow cut across the fillets.
Drizzle with more olive oil and sprinkle with sea salt flakes.
Roast in the oven for 4 mins. Serve with lemon squeezed over the top.

The Art of Fire Langoustines with Garlic Chilli Butter Seafood, seared to perfection Few ingredients respond to heat quite like fresh langoustines. They cook in moments, turning a vibrant coral pink as the shells char and the meat becomes sweet, delicate and buttery. When paired with garlic, chilli and fresh parsley, they deliver everything you [...]
A wood fired twist on a chicken parmigiana - Chicken and Burrata Bake! This recipe is my wood fired twist on a chicken parmigiana with a cheesy white sauce, bacon, fennel and celeriac instead of the more summery tomato combo. It’s topped with a decadent ball of burrata that melts into the bake with a [...]
Meatball Sub! This Italian inspired meatball marinara open sandwich is a real treat. The meatballs cooked on the BBQ caramelise perfectly to provide an umami sweet crust and as soon as they’re cooked and you toss them in the rich tomato sauce they almost shout out for grilled cheese. You can cook this whole recipe [...]
