The ultimate healthy fast food recipe – Mackerel and Tapenade!
This recipe takes minutes to prepare and just moments to cook. The fierce heat of a pizza oven is perfect for roasting fresh fish without over cooking it and this herby stuffing is a twist on a classic tapenade.
Method
Preheat your oven to 250-300˚C.
In a food processor blitz your olives, capers, gherkins and basil with olive oil. Stuff the cavity of your mackerel with the herby tapenade and score the fish several times with a shallow cut across the fillets.
Drizzle with more olive oil and sprinkle with sea salt flakes.
Roast in the oven for 4 mins. Serve with lemon squeezed over the top.
