San Giusto a Rentennano, in Gaiole in southern Chianti Classico, is a 160-hectare estate run by Luca Martini di Cigala and his sister Elisabetta. Once a Cistercian monastery and later owned by the Ricasoli family, it passed to the Martini di Cigala family in 1904. Seven hectares are devoted to olive groves on drained tuffaceous soils. The olives are hand-picked, pressed within 18 hours and cold-extracted under nitrogen before light filtration. Despite a challenging 2025 season and lower yields, quality was excellent. The extra virgin olive oil is vivid and concentrated, with fresh grass, green fruit and almond notes, balanced by a smooth texture and a gently peppery, persistent finish.
