This garden inspired recipe uses mange tout or sugar snap peas and goats cheese with mint for a really fresh and colourful pizza. It’s surprisingly light to eat and works deliciously with a crispy white wine or glass of rosé.
Method
Preheat your pizza oven to 375˚C and move your fire to one side. Roll out your dough and place it onto a peel with polenta.
Spread a ladle of tomato sauce around the pizza dough base with the base of the spoon.
Top your pizza with goat’s cheese, peas, spring onion and lots of mint.
Bake for 2-3 mins turning regularly. Garnish with edible flowers and a drizzle of mint herb oil.
