In the sun baked landscapes of southern Italy, where olive trees stretch toward the Ionian Sea, the Le Ferre estate produces an oil that captures the strength and warmth of Puglia itself. Bold, aromatic and rich in character, Le Ferre Organic Extra Virgin Olive Oil celebrates both heritage and innovation — the essence of southern craftsmanship in every drop.
Harvest
Each harvest in Puglia is shaped by the rhythm of the Mediterranean climate. Hot, dry springs and summers produce smaller yields but olives of remarkable concentration and purity. The dry conditions mean almost no disease or pest pressure, resulting in healthy fruit and a clean, vibrant oil. Though the season is short, the quality is consistently exceptional — proof that in Puglia, less can truly mean more.
Producer
Le Ferre was founded by brothers Luca and Giuseppe Esposito in the early 2000s in the town of Castellaneta, near Taranto. It is a region famous for its red earth, sea breezes and deep olive growing tradition. Giuseppe is one of Italy’s youngest maestro oleario — a master oil maker — and brings a modern eye to an ancient craft.
The Esposito brothers were the first in Puglia to produce a single varietal oil from the Coratina olive, a native variety celebrated for its intensity and peppery finish. They work with their father, a respected agronomist, and a small group of trusted local growers to maintain the highest quality across every batch.
Olive Groves
The brothers’ groves are located in Le Ferre, a district named for the iron rich soil (ferro) that gives both the oil and the land their colour and strength. The trees — many over a century old — grow 230 to 290 metres above sea level and are pruned in the traditional Puglian vase shape.
Thanks to the region’s proximity to the Ionian Sea, the groves are constantly brushed by coastal breezes that keep the fruit healthy and the air dry. The result is an ideal environment for producing olives with intense aroma and exceptional structure.
Production
Le Ferre’s production process combines meticulous care with cutting edge technology. The olives are harvested into small ventilated boxes to protect them from bruising, then washed, destemmed and milled within hours. The paste is mixed slowly before undergoing a carefully controlled cold centrifuge extraction at temperatures never exceeding 27°C.
From harvest to bottling, every step is designed to protect freshness and flavour. The oil is stored in temperature controlled stainless steel tanks and filtered before bottling under nitrogen — a method that locks in purity, aroma and vivid green colour.
Tasting Notes
Le Ferre Organic Extra Virgin Olive Oil opens with an intense perfume of freshly pressed green olives and artichokes. On the palate, it reveals both spiciness and fine bitter notes, balanced by the fullness of ripe fruit. It is a bold yet harmonious oil — rich, structured and unmistakably southern.
How to Use
With its strength and lively character, this oil shines when paired with robust flavours. Use it where you want freshness, spice and depth to stand out.
1️⃣ Puglian Focaccia – Drizzle Le Ferre oil over dough before baking, and again just before serving. The oil’s peppery finish lifts the soft bread beautifully.
2️⃣ Grilled Octopus with Lemon and Parsley – Brush the octopus with the oil before grilling, then finish with a generous drizzle and a squeeze of lemon for a bright, smoky dish.
3️⃣ Orecchiette with Broccoli Rabe – Toss this regional pasta with garlic, chilli and Le Ferre oil for a true taste of Puglia.
4️⃣ Fire Roasted Aubergine Dip – Roast whole aubergines over flame, scoop out the flesh and blend with garlic, lemon and Le Ferre oil for a silky smoky purée.
5️⃣ Charred Steak with Sea Salt and Oil – Finish grilled steak with a spoonful of Le Ferre oil just before serving. The fruit and spice enhance the meat’s flavour perfectly.
