Harvest
Each season begins with the same care and anticipation. The cool Tuscan winters give way to gentle springs and long, dry summers that create perfect conditions for healthy, flavourful olives. Harvest takes place from mid October, when the fruit is at its most aromatic and rich in natural oils. Though the yield is modest, the quality is exceptional, resulting in an elegant oil with purity and freshness.
Producer
Capezzana lies just 24 kilometres northwest of Florence in the Carmignano region. The estate has belonged to the Contini Bonacossi family for generations, with Filippo Contini Bonacossi leading olive oil production today. Olive oil has been made here since Etruscan and Roman times.
The earliest written record dates to 804 AD, describing Capezzana’s vineyards and olive groves. By the 14th century, the region’s oil was already renowned, commanding premium prices in London and Bruges. Today, the family continues that legacy, uniting history, craft and sustainability under one organic philosophy.
Olive Groves
Capezzana’s 140 hectares of olive groves sit near the northernmost limit of olive cultivation. The cooler climate results in lower yields but far greater concentration of flavour.
The oil is made primarily from Moraiolo olives, an early ripening variety known for its fruity, gentle and aromatic profile. These trees, numbering around 26,000, are tended organically and harvested with precision to protect the natural environment and the delicate balance of the land.
Production
Capezzana blends modern technology with traditional Tuscan care. The olives are picked early and pressed within hours of harvest to preserve their bright character. The estate uses continuous stainless steel pressing to prevent oxidation, producing an oil of remarkable clarity and freshness.
After pressing, the oil rests in a combination of terracotta urns and stainless steel vats to settle naturally before bottling. The result is an oil with ultra low acidity, vibrant colour and lasting aromatic depth. Every step of the process reflects Capezzana’s pursuit of purity and perfection.
