Harvest
Each harvest at Tenuta i Bonsi begins with anticipation and tradition. The olive trees, nurtured through warm summers and mild winters, are picked by hand in mid October when the fruit is perfectly ripe. The dry season and clean growing conditions allow the olives to remain healthy and vibrant, yielding an oil of rare purity and depth.
Although the yield from each tree is modest, the resulting oil is exceptional — rich in aroma, low in acidity, and unmistakably Tuscan in character.
Producer
Tenuta i Bonsi, near Reggello southeast of Florence, has been part of the Budini Gattai family since the 19th century. Leopoldo Gattai, a successful entrepreneur during the Italian unification, invested in the land to preserve the region’s agricultural heritage. Today, the family continues his vision, managing more than 380 hectares — including 140 hectares of olive groves — with a deep respect for tradition and sustainability.
Over two thirds of the trees are the Frantoio variety, known for producing full bodied, fruity oils, while the remainder are Moraiolo and Leccino, which add subtle spice and floral freshness.
Olive Groves
The groves of Tenuta i Bonsi sit at around 400 metres above sea level on south facing terraces supported by ancient drystone walls. This part of Tuscany, the Alto Valdarno, has long been celebrated by Florentines for producing olive oils of outstanding perfume and balance.
The combination of altitude, mineral rich soils and organic cultivation creates the ideal environment for fruit that ripens slowly, concentrating flavour and aroma. Research in the estate’s experimental plots continues to refine cultivation and improve quality, ensuring that Tenuta i Bonsi remains one of the most respected names in Tuscan olive oil.
Production
Harvesting is done entirely by hand, ensuring that the olives are handled gently and pressed within hours. The estate’s own modern mill blends stainless steel precision with historic terracotta urns, creating a unique harmony between past and present.
Using an Alfa Laval decanter and Pieralisi crusher, the oil is cold pressed to maintain freshness and complexity. Every batch is rigorously tested and tasted, with particular attention paid to keeping acidity below 0.2 per cent — well within the strictest standards for Extra Virgin olive oil.
