Fattoria Selvapiana has been part of the Giuntini family legacy since 1827. Today, the estate is led by Federico Giuntini Masseti, whose deep connection to the land began in childhood. The estate’s 31 hectares of olive groves lie between 250 and 300 metres above sea level in the Sieve Valley. Here, a cool current from the Apennines creates a unique climate that slows ripening and amplifies aroma.
Selvapiana’s oil is made primarily from Frantoio olives, a late ripening variety known for its vivid green colour and spicy finish. Harvesting the fruit while still green ensures a bold, peppery oil with remarkable freshness and energy — a true hallmark of the Rufina style.
Production
Selvapiana uses ultra modern stainless steel continuous presses to extract the oil with maximum purity. This gentle yet precise method preserves the colour, aroma and fruitiness for longer.
